  • 1 cup pumpkin puree
  • 1 egg
  • 2tbs oil
  • 2tbs vinegar
  • 2 cups flour
  • 3tbs brown sugar
  • 2tsp baking power
  • 1 tsp baking soda
  • 1tsp allspice
  • 1tsp cinnamon
  • ½ tsp ginger
  • ½ tsp salt

In a large bowl mix together the milk, the puree, the egg, oil, and the vinegar. In a separate bowl mix the flour, sugar, baking power, baking soda, allspice, cinnamon, ginger, and the salt. Add this to the wet pumpkin mixture. Spray a skillet with cooking spray and heat it up. Put the batter by scoops onto the griddle and cook until both sides are slightly browned. Serve right away while they are still hot.

Egg White Omelet

A person can enjoy a great tasting and filling omelet that it healthy and satisfying. To make this omelet a person is going to need the following:

  • 2tbs onions, chopped
  • 2tbs green bell pepper, chopped
  • 2tbs mushrooms, chopped
  • Salt
  • Black pepper
  • 22 ounces egg white substitute

Spray a microwave safe pan with cooking spray. Put the onions, green peppers, and mushrooms into the pan. Season with salt and pepper. Add the egg whites. Microwave for 3 minutes Remove from heat and stir up the eggs. Microwave another 30 minutes and it is ready to serve.
