Preheat the oven to the temperature of 350 degrees. Line a muffin pan with paper muffin liners. In a bowl mix the flour, wheat flour, sugar, bran, oats, wheat germ, baking powder, baking soda, and the salt. Add the blueberries and the walnuts. In another bowl mix the banana , buttermilk, egg, oil, and the vanilla. Add this to the dry mixture. Mix until blended. Put this batter into the muffin cups. Bake 15-18 minutes. The muffins can be enjoyed warm or they can be allowed to cool.
- ½ cup whole wheat flour
- 2 egg whites
- ½ cup skim milk
- ½ tsp salt
- 1tbs oil
- ½ cup mixed berries, fresh or frozen
To make the batter for the crepe whisk together the flour, egg whites, milk, salt, and oil. Coat a skillet with cooking spray and set the heat to a medium setting. Put ¼ cup of the prepared batter into the pan. Tilt the pan in the pattern of a circle to make sure the batter is able to coat the pan and spread to the edges. Cook the batter until it is lightly browned which is about 2 minutes. After this flip it over and put the berries in the center. Allow the crepe to cook for another two minutes. While still in the pan fold the crepe in half. Remove it from the pan and serve. The fruit will give the crepe the sweet taste that a person will be looking for. Since it is not cooked in butter or filled with a cream they will be less fat and fewer calories.
