It’s that time of day. It’s snack time. Your tummy is rumbling, and you need something to eat before you start feeling jittery. But, oh wait, you can’t go to the vending machine because you made a commitment to live a healthier lifestyle, and this commitment includes snacks. If making healthy snacks has you in a fix, don’t worry, we can help. These great-tasting, healthy snack recipes will help you eat more healthy diet and satisfying your tastebuds.
Fruit and Nut Bars
2 cups of nuts, your choice (Cashews work well.)
2 cups of no sugar added dried fruit, (Dates, raisins, and dried berries are great options.)
Combine the nuts and fruit in a food processor until chopped very finely. Scoop out of the food processor and shape into bars. Let the fruit and nut bars set on a sheet of wax paper for an hour. Enjoy!
Makes 6 bars.
1 can of chickpeas
2 tbsp. of tahini
2 Tbsp of garlic cloves
2 Tbsp. of pine nuts
Place all of the ingredients in a food processor. Process until the texture of the hummus is smooth and creamy. Serve with veggies, such as cucumber or carrots.
Fast Fruit Dip
1/8 c. natural peanut butter or almond butter
1 c. vanilla greek yogurt
1 Tbsp. stevia or other natural sweetener
With a spoon, stir nut butter and Greek yogurt together in a bowl. Stir in the stevia and you have an easy and tasty fruit dip. Serve with apple slices.
This dip is sure to please any tailgating party!
Cheesy Black Bean Dip
1-15 oz. can black beans, drained
1/2 tsp. red pepper flakes
1/2 c. Mexican blend cheese, shredded
1 Tbsp. Extra virgin olive oil
In a sauce pan, pour the tablespoon of extra virgin olive oil. Rinse and drain the can of black beans, and pour them into the sauce pan. Use medium-low heat and stir the beans mashing them with a spoon. Stir in the red pepper flakes. When beans have reached a smoother consistency, stir in the cheese. When the cheese is slightly bubbling, the dip is ready to serve.

Mini Grapesicle Pops
1 c. vanilla-flavored Greek yogurt
20 green grapes
On a cookie sheet, place a sheet of wax paper. Place a grape on each toothpick. Dip the top half of each grape in the Greek yogurt, and place the evenly coated grapes on the wax paper. Once the tray is full, place it in your freezer for 2 hours.
2 bananas, frozen
3 c. fresh mixed berries
1/4 c. stevia
1 c. coconut milk
Place all the ingredients in a blender, and blend until smooth. Separate the mixture into 2 cups and place in your freezer for 1 and 1/2 hours. Enjoy!
A movie night munchy:
1-15 oz. can chickpeas, rinsed and drained
1 tsp. Italian seasoning
1 tsp. paprika
grated Parmesan cheese
Place a sheet of wax paper on a cookie sheet. Heat your oven to 350 degrees and place the drained chick peas on the wax paper. Sprinkle Italian seasoning, paprika, and Parmesan cheese on the chickpeas and bake for 1 hour. The chickpeas should be golden with a crunchy exterior. Remove from your oven and let them cool.
Tame your sweet tooth with this crisp treat!
6 gala apples, in large slices
1/2 c. semi-sweet chocolate chips
1/2 c. natural peanut butter, or other nut butter
Slice the apples into large pieces. Spread the nut butter evenly, on top of each slice. Sprinkle semi-sweet chocolate chips on each apple slice and serve.
